Venison and bacon sausage rolls.
Run some venison and bacon through your mincer. I use a 2/3 venison 1/3 bacon ratio usually with about 800 grams of venison
In a large bowl mix minced meat with 1/2 cup grated cheese, 1/3 cup bread crumbs, an egg, salt, pepper to taste… Lay the mix down along 1/2 sheet of puff pastry, and roll them up, using some beaten egg to get the pastry to stick.
Pop them in a pre-heated oven for 30-40 minutes
Stick em in your gob…

Lemon and bacon rolled leg of goat. Combine a 1/2 a cup of bread crumbs, lemon zest and lemon juice
put the stuffing mix in the boned out leg, wrap in bacon and tie with string. It’s going in the Weber for a while whilst I go for a ride with the girl spawn. Back soon…
