Ahhh, a proper connisseur! Very nice, and you are in the best climate. I tried barrel ageing an oatmeal stout up here in the tropics (wouldnt waste a good wash up here) and it was hideous.
The cool, the dry and the time.

That is just what happens even if you run a small still ,being very conservative with the head run discard. A small batch works out to around at least six liters @ 40 proof (on a 25 liter mash) , so you end up with an excess.
